Serve up lasting energy, balanced blood sugar and a giant immunity boost with this monster of a sandwich—made from whole grains, cheese and roast beef
2 slices provolone cheese
7 (1") seedless cucumber triangles, divided
1 whole-wheat** bagel thin, **like Thomas’, split
2 Tbs. light Italian dressing, divided
2 slices deli** roast beef **
6 (1") red pepper triangles
Using small plain round tip (Wilton #12) or drinking straw, cut 2 circles from 1 cheese slice for eyes; set aside. Using small plain round tip (Wilton #7), cut 2 circles from 1 cucumber triangle for pupils; set aside.
Spread 1 1/2 Tbs. Italian dressing on cut sides of bagel thin. Assemble sandwich, alternately layering cheese slices and roast beef slices, being sure to avoid covering the hole.
Heat grill pan or panini press to medium-low. Lightly coat both sides of sandwich with nonstick cooking spray; place in pan. Grill 2 min. or until toasted, turning once.
Cut sandwich in half; cut one half again to make head and tail. Immediately insert pepper and remaining cucumber triangles into rounded sides of sandwich pieces to create spikes.
Arrange pieces upright on serving plate to create Loch Ness monster. Using remaining dressing, “glue” cucumber rounds to cheese rounds and attach for eyes. Serve immediately.
