Mac ’n’ cheese makes for a tasty dinner, but sometimes our rich and creamy version can feel a bit too heavy. So today we’re swapping out half the pasta with cooked, chopped cauliflower to lighten it up. Cauliflower adds a dose of vitamins C and K and has a mild flavor and is a similar texture to pasta, so there's hardly a difference once added to the cheesy sauce. Delicious!
