Stacked with peanut butter cookies and a Neufchâtel filling, this peanut-studded no-bake delight is truly a treat for all
2 pkgs. (8 oz. each) *Neufchâtel cheese, *at room temp.
6 Tbs. honey
1 pkg. (12 oz.) whipped topping
70 (2") peanut butter cookies
1 1/4 cups chopped honey roasted peanuts
3 Tbs. chocolate sauce
Using mixer on medium speed, beat Neufchâtel cheese and honey until smooth. Add whipped topping. Beat 30 sec. or until combined.
Arrange 8 peanut butter cookies in 9" circle on platter. Fill in center cookies. Spread 1 cup whipped Neufchâtel mixture over cookies. Sprinkle with 1/4 cup peanuts. Repeat layering with remaining cookies, Neufchâtel mixture and peanuts, finishing with Neufchâtel mixture.
Swirl chocolate sauce into Neufchâtel mixture on top. Cover lightly and chill overnight. Garnish with peanut butter cups, chocolate curls and a mint sprig or as desired.
