Layering taco meat in a muffin pan with wonton wrappers and cheese adds a twist to a dinnertime favorite. By popular demand, we made this fun family favorite even healthier with 50 percent less fat and 25 percent fewer calories overall.
1/2 lb. *lean ground *turkey
1 can (15 oz.) fat-free refried beans
1 pkg. (1 oz.) taco seasoning
1/4 cup chopped cilantro
48 wonton wrappers
1 1/2 cups low-fat shredded 3-cheese blend
1 cup low-fat sour cream
1/2 cup diced red onions
1 cup diced red peppers
In skillet, cook turkey until browned. Add beans, taco seasoning, cilantro and 2/3 cup water. Let simmer 5 min.
Place 24 wrappers in greased 12-well muffin pans; coat with cooking spray. Spoon 1/2 beef and 1/2 cheese into wells
Repeat layering with remaining wrappers, turkey and cheese. Bake at 350°F for 10 min. Top with last 3 ingredients.
