By microwaving the spuds, we made this side in a fraction of the time—and without heating up the kitchen!
6 medium baking potatoes
3/4 cup grated pepper-Jack cheese
3 strips cooked bacon, crumbled
1/4 cup reduced-fat *sour cream *
2/3 cup prepared guacamole
1. Heat grill. Microwave potatoes 12 min. or until tender, turning twice. Let cool slightly. Cut in half; scoop out flesh (save for another use), leaving 1/4" shell.
2. Top potato shells with cheese and bacon. Grill 3 min. Top with sour cream and guacamole. Serve warm.
