Impress everyone with this sweet and spicy centerpiece that's the perfect use for your summer-fresh peaches
3/4 cup Tuscan Italian dressing, like Newman’s Own
2 cloves garlic, minced
2 Tbs. tomato paste
1/4 cup chopped fresh *cilantro, *divided
2 lbs. bottom round roast
2 cups chopped peaches
1/2 cup chopped scallions
1/4 cup orange-citrus dressing, like Litehouse
1/2 red pepper, diced
1 small jalapeño pepper, minced
1** lime,** zested and juiced
In bowl, combine Italian dressing, garlic, tomato paste and 2 Tbs. cilantro; reserve 1/2 mixture. In large resealable plastic bag, combine remaining dressing mixture and beef. Close bag; turn to coat. Let marinate 1 hr.
Heat grill to medium. Remove roast from marinade; discard used marinade. Cook beef over indirect heat 40 min. or until desired doneness, basting occasionally with reserved dressing mixture. Let sit 10 min. before slicing.
In bowl, combine next 5 ingredients, 2 Tbs. lime juice, 1 tsp. lime zest and remaining cilantro. Season with salt and pepper. Serve peach salsa with beef.
