2 Tbs. salted butter
2 Tbs. flour
1 tsp. dry ground mustard
2 cups 2% milk
11⁄2 cups shredded reduced-fat sharp cheddar cheese
1 box (8 oz.) quinoa or regular elbow macaroni, cooked and drained
1 cup baby spinach, thinly sliced
1 large egg white
1 Tbs. seasoned dry bread crumbs
Heat oven to 400°F. In large microwave-safe bowl, microwave butter 20 sec. or until melted. Whisk in flour and mustard. Microwave 20 sec. or until bubbles form.
Slowly whisk in milk. Microwave 2 min. or until thickened, stirring once. Stir in cheddar cheese until blended.
Stir cooked macaroni, spinach and egg white into cheese mixture until combined. Divide macaroni mixture evenly among 12-well greased muffin pan. Sprinkle with bread crumbs.
Bake 15 min. or until golden brown. Let cool in pan 10 min. Run knife around edge of wells to loosen cups; remove from pan.
