These sweet treats are a not-so-guilty pleasure because you make them with applesauce instead of oil—meaning less unnecessary calories!
Here’s our scrumptiously wholesome recipe:
1 (16.5 oz.) box devil’s food cake mix
1/3 cup *applesauce *
3 *eggs *
1 cup sweetened flaked coconut, _divided _
1 (13.4 oz.) can dulce de leche
3/4 cup toasted chopped pecans
1/4 cup chocolate chips, _melted _
24 toasted *pecan *halves
1. Heat oven to 350°F. Line two 12-well cupcake pans with liners. Using mixer on medium speed, beat first 3 ingredients and 3/4 cup water 2 min. or until light and fluffy. Stir in 1/2 cup coconut; divide among liners in pans.
2. Bake 15 to 18 min. or until toothpick inserted in center comes out clean. Let cool completely.
3. Meanwhile, in bowl, mix dulce de leche with chopped pecans and remaining coconut; add additional coconut, if desired. Spread frosting on cupcakes; drizzle with chocolate. Top each cupcake with a pecan half.
