6 small *Yukon Gold potatoes, *washed
1 clove *garlic, *thinly sliced
1 Tbs. chopped fresh** thyme**
1. Heat oven to 400ºF. Place each potato in bowl of wooden spoon. With sharp knife, cut thin slices three-quarters of the way through. The spoon will stop the knife from cutting all the way through.
2. Arrange potatoes on baking sheet. Coat each potato with olive-oil cooking spray. Slip garlic between slices; season with salt and pepper.
3. Roast 1 hr. or until golden brown and tender. Coat with cooking spray after 30 min. Garnish as desired.
