Serve up smiles with this melon “grill” that’s loaded with immunity-boosting antioxidants, filling fiber and hydrating electrolytes!
1 cup low-fat *vanilla yogurt *
1 orange, zested and juiced
1 small (5 1/2 lb.) watermelon, halved
1/2 pint blackberries (for charcoal)
Bamboo skewers (for grill grates)
3 straight 5"-long baby or Persian cucumbers (for legs)
3–4 cups assorted sliced** fresh fruit,** like cantaloupe, pineapple, kiwi, grapes and/or berries
In bowl, mix yogurt, 1 Tbs. orange juice and 1/2 tsp. orange zest. Chill until needed. With melon baller, scoop flesh from melon halves. Cut 3 holes in bottom of 1 melon half for grill legs; invert and fill with blackberries for charcoal.
Insert skewers at 1/2" intervals 1/4" below cut edge for “grill grate.” Trim skewers as needed. Insert cucumbers into holes, trimming bottom as needed to create flat surface. Place on platter.
Thread assorted fruit and watermelon balls onto skewers; arrange on “grill grate” and platter. With skewers, attach remaining watermelon half for grill top. Serve with yogurt dip.
