Buttermilk is like a perfectly timed joke--it can lighten up an otherwise heavy situation. No one wants to feel weighed down before they start the day, but there’s no denying the appeal of pancakes. Enter, buttermilk. Fluffy flapjacks owe their hefty but not heavy quality to this all-too-easy-to-forget liquid.
Next time you inevitably forget to grab it as you’re rushing through the dairy aisle, skip the pajama-clad early-morning run back to the supermarket and make your own at home instead. All you need is milk, fresh lemon juice, and a couple extra minutes. When you let it sit for five or 10 minutes, the acid from the lemon curdles the regular milk to a texture and tang similar to buttermilk. (Don’t worry, you won’t notice the curdled bits in your short stack.)
