Instead of standing over the sink before you’ve even started cooking, painstakingly removing every scrap of shell, peel them after they’re cooked! It’s not only easier to get the shells off after they’ve gotten the heat treatment but also better for the tender meat--and potentially the taste of your recipe. A lot of the flavor of shellfish hides in their shells, so save a bit of the water you cook them in and use it in the rest of your dish to upgrade the flavor of everything from pasta to seafood stews.
