It's a Christmas miracle: It only takes 10 minutes to prep this succulent show-stopper!
1⁄4 cup Dijon mustard
4 cloves *garlic, *peeled and minced
2 Tbs. minced fresh thyme
1 standing beef rib roast with bones (about 8 lbs.)
1. Heat oven to 425°F. In bowl, combine mustard, garlic and thyme. Add salt and black pepper, if desired.
2. Place beef on rack set in roasting pan. Spread mustard mixture evenly over beef. Roast 30 min.
3. Reduce heat to 350°F. Roast 1 hr. more or until thermometer inserted in meat, not touching bone, reads 140°F for medium-rare. Transfer beef to serving platter; loosely cover with aluminum foil. Let sit 15 min. before slicing. Garnish with fresh currants, figs, and herbs, if desired.
