Grill up a good time today with these burgers, which are made with a mix of lean beef and mushrooms for a hearty flavor that's waistline friendly
1 1/2 lbs. lean ground beef
8 oz. cremini mushrooms, minced
2 Tbs. minced scallions
2 Tbs. minced fresh herbs
1 cup light ranch dressing, divided
6 hamburger buns, toasted
In bowl, mix first 4 ingredients and 1/4 cup dressing. Season with salt and pepper. Shape mixture into 6 burgers.
Heat grill. Grill burgers 8 min. or until desired doneness. Serve on buns with remaining dressing and toppings.
*For Zesty Bruschetta: Saute 1 tsp. each garlic and salt in 2 Tbs. oil. Add 1/4 cup vinegar and 1 Tbs. brown sugar. Bring to a boil. Toss with 12 halved cherry tomatoes, 1 1/2 cups sliced onions, 1 Tbs. diced peppers and 2 Tbs. basil. Chill.
**For Pepper Relish: Saute 4 cups sliced peppers and 1 cup sliced onions in 1 Tbs. oil until tender. Add 2 Tbs. parsley and 1/4 tsp. Italian seasoning.
