Three luscious layers—each made with a different type of chocolate—make this cake a decadent delight
25 chocolate-wafer cookies, like Nabisco, ground
1/2 cup melted milk chocolate
1/3 cup salted butter, melted
3 Tbs., plus 1 cup *sugar, *divided
4 (8 oz.) pkgs. Neufchâtel cheese, at room temp.
4 eggs, at room temp.
4 oz. dark chocolate, melted
4 oz. white chocolate, melted
1 cup lightly whipped cream
Heat oven to 325°F. In bowl, combine first 3 ingredients and 3 Tbs. sugar; press in bottom of 8" springform pan. Place on baking sheet; set aside.
With mixer, beat remaining sugar and cheese 30 sec. One at a time, slowly beat in eggs until just blended; divide among 2 bowls. Stir dark chocolate in one bowl; pour into crust. Bake 15 min.
Stir white chocolate into remaining batter; pour over chocolate layer. Bake 45 min. or until almost set. Run knife around edge of pan; cool completely. Chill 4 hrs. Top with whipped cream.
