Packed with whole wheat and fresh fruit, these Cookie Monster–approved treats deliver lasting energy, focus and a big immunity boost
1 1/4 cups all-purpose flour
1 1/4 cups wheat flour
1 1/2 tsp. baking soda
1 tsp. ground *cinnamon *
1/2 tsp.** salt**
1 stick butter, at room temp.
1 1/2 cups** sugar**
1 tsp. *vanilla extract *
2 large *eggs *
2 pears or apples, peeled and shredded
2 cans (16 oz. each) vanilla frosting
*Blue food coloring *
Blue sugar crystals
44 chocolate chips
44 white candy melts, like Wilton
11 chocolate-chip cookies, halved
2. Beat in eggs, one at a time. Reduce mixer speed to low; slowly beat in flour mixture. Stir in shredded pears. Divide batter evenly among 22 lined cupcake wells. Bake 12 min. or until done. Let cool completely.
3. In bowl, mix frosting and food coloring to create desired shade of blue. Frost cupcakes and sprinkle with blue sugar crystals.
4. Using frosting as glue, attach 1 chocolate chip to flat side of each candy melt for eyes. Place eyes on cupcakes. Add cookies, making small slit in cupcake if necessary and crumbling cookie, if desired.
