A quick tequila-lime glaze is all that's needed to transform a regular grilled chicken into one that's celebration-worthy!
3 Tbs. vegetable oil
2 Tbs. minced garlic
1⁄4 cup chopped cilantro, divided
1⁄4 cup tequila, divided
2 Tbs. lime zest, divided
1 roaster chicken (about 7 lbs.)
1 cup orange juice
1⁄2 cup lime juice
1 Tbs. honey
Heat grill. In bowl, blend oil, garlic and 1⁄2 each cilantro, tequila and lime zest; spread on chicken. Place chicken in grill-safe roasting pan.
In pan, mix remaining ingredients; place on grill over indirect heat.
Cover grill; cook chicken 11⁄2 hrs. or until 165°F, basting occasionally.
