Sweet-as-can-be, these pound cake baby chicks are easy-to-make and sure to please everyone at any spring celebration.
1 box (16 oz.) pound cake mix
2 cans (16 oz. each) vanilla frosting
2 cups shredded coconut
2 tsp. yellow food coloring, _divided _
12 red chew candies, like Starbursts
12 small black round sprinkles, for eyes
12 large yellow round sprinkles, for eyes
Heat oven to 350°F. Prepare cake according to directions. Pour 1⁄4 cup into each well of greased 6-well muffin tin. Pour 2 Tbs. into each well of greased 12-well mini-muffin tin.
Bake large cakes 18 min. and mini cakes 12 min. or until done. Let cool. Trim 1/4" from sides of 6 mini cupcakes; vertically halve remaining mini cupcakes.
Place inverted large cupcakes on rack set in baking sheet; using 1⁄2 cup frosting, attach mini cupcakes to each for heads. In bowl, combine coconut and 1/4 tsp. food coloring. In bowl, combine remaining frosting and coloring; spoon 1 cup into bag with star tip (Wilton #21).
Microwave colored frosting 30 sec., stirring once. Coat cupcakes; roll in coconut. Attach halved cupcakes for wings; pipe frosting.
Microwave candies 10 sec.; flatten. Cut out feet, beaks and combs; attach to birds. Add sprinkle eyes. Place on green coconut, if desired.
