1 1/2 cups minced cooked *chicken *
1/2 cup drained canned white beans, mashed
1/2 cup yogurt ranch dressing, like Bolthouse Farms
1/2 tsp. Montreal chicken seasoning, like McCormick
2 Tbs. minced red peppers
2 Tbs. minced scallions
2 green burrito wraps
Soft cream cheese
Red pepper strips
1. In bowl, combine cooked chicken, white beans, yogurt ranch dressing, chicken seasoning, red peppers and scallions until blended. Season to taste with salt and pepper.
With 1 1/2" round cutter, cut 1 circle from one end of each wrap to make caterpillar heads; set aside. Divide chicken mixture evenly among wraps. Starting from cut side, roll each wrap tightly into log. (Wrap logs in plastic and chill 15 min. or until firm before slicing, if desired.) Trim ends off log; slice each log into 8 rounds.
On 2 serving plates, arrange 8 rolls each into caterpillar body shapes. Add shredded carrots for legs. Place reserved rounds from wraps on front of caterpillar body for head; decorate as desired with cream cheese, chive and red peppers to create face. Garnish platter as desired.
