These sweet and easy-to-make treats are made with applesauce instead of oil, which them low in fat and under 200 calories a piece!
1 box (16.5 oz.) devil’s food cake mix
1 cup sweetened flaked coconut, divided
1/3 cup applesauce
1 can (13.4 oz.) dulce de leche
¾ cup toasted chopped pecans
¼ cup chocolate chips, melted
24 toasted pecan halves
Heat oven to 350°. Line two 12-cup cupcake pans with paper liners. Using mixer on medium speed, beat together first 3 ingredients and 3/4 cup water until light and fluffy. Stir in 1/2 cup coconut; divide among liners in pan.
Bake 15 to 18 min. or until toothpick inserted in center comes out clean. Cool.
Meanwhile, in bowl, mix dulce de leche with chopped pecans and remaining coconut. Spread frosting on cupcakes; drizzle with chocolate. Top each with a pecan half.
