Fry up this crispy Cajun catfish for a family-friendly dinner _that's full of down-home delish._
3/4 cup** flour**
1/4 cup fine** cornmeal**
2 Tbs. Cajun seasoning
1 tsp. garlic powder
1 tsp. onion powder
1/4 tsp. ground black pepper
1/4 tsp. baking powder
2 Tbs. chopped fresh parsley
1 cup buttermilk
1 1/2 lbs. catfish fillets, cut into pieces
4 cups vegetable oil
In bowl, whisk together first 8 ingredients until blended.
Pour buttermilk into pie plate. Dip each fish fillet in buttermilk, then flour mixture, turning to coat. Repeat for double coating, if desired.
In deep skillet or fryer, heat 2" oil to 350°F. In batches, cook fillets 3 min., or until golden brown and cooked through, turning once. Drain.
