For a fun twist on zesty Mexican delish, try this layered cheesy, meaty dish that's sure to spark smiles
5 (10") flour tortillas
1 zucchini, sliced
2 Tbs. vegetable oil
1 lb. ground beef
2 tsp. minced garlic
1 red onion, diced
1 can (15 oz.) black beans, drained
1 can (10 oz.) enchilada sauce
3/4 cup rice
1 cup** tomato sauce**
3 cups shredded Mexican cheese blend and/or part-skim mozzarella cheese
2 tomatoes, diced
2. Cook zucchini in oil until tender; set aside. Sauté beef with garlic and onions; add beans and enchilada sauce.
3. Meanwhile, prepare rice according to package directions. Stir in tomato sauce until blended.
4. On parchment-lined pan, layer 1 tortilla, 1/2 cup cheese and 1/2 beef. Repeat layering using rice instead of beef.
5. Repeat layering twice, first with zucchini and tomatoes, then with beef. Top with tortilla and cheese. Bake 10 min.
