As the autumn air begins to crisp, this fun take on a comfort food favorite will keep your whole gang happy
1 onion, chopped
1 small sweet potato, peeled and shredded
2 tsp. minced garlic
2 Tbs. canola oil
1 1/4 lbs. ground beef
1 (21 oz.) can Texas ranch–flavored black beans, like Bush’s Grillin’ Beans
1 cup chunky salsa
1/2 cup corn
1/4 cup chopped fresh** cilantro **
2 1/2 cups corn chips, like Fritos, divided
1 1/2 cups shredded Cheddar cheese
1 cup sour cream
1. Heat oven to 375ºF. In skillet over medium heat, cook onions, potatoes and garlic in oil 10 min. or until tender.
2. Add beef. Cook 5 min. or until beef is browned. Stir in beans, salsa, corn, cilantro and 11⁄2 cups corn chips.
3. Lightly coat six 1-cup ramekins with cooking spray. Sprinkle 1 cup corn chips in bottom of ramekins.
4. Divide beef mixture evenly among ramekins; sprinkle with Cheddar cheese. Bake 20 min. Top with sour cream.
