Perfect for a breakfast surprise or after-school snack, these grab ’n’ go oatmeal muffins combine delicious fall flavors into a tasty, healthy treat that even the pickiest eaters can’t resist!
2 cups old-fashioned oats
1/4 cup ground flaxseed (optional)
2 Tbs. flour
2 tsp. baking powder
1 tsp. ground** cinnamon**
3/4 tsp. salt
1 1/2 cups milk
1/2 cup unsweetened or berry** applesauce**
1/2 cup firmly packed brown sugar or maple syrup
1 large egg
2 Tbs. safflower oil
2 tsp.** vanilla extract **
Heat oven to 350°F. Line 12-well muffin pan with cupcake liners. In bowl, combine oats, flaxseed, flour, baking powder, cinnamon and salt.
In large bowl, whisk together milk, applesauce, brown sugar, egg, oil and vanilla extract. Add flour mixture, mixing just until combined. Stir in add-ins from list below, if desired.
Divide batter evenly among cupcake liners. Bake 20 min. or until done. Serve warm or at room temperature.

Apple-Raisin-Pecan: Stir in 1/2 cup grated apples, 1/4 cup raisins and 1/4 cup chopped pecans
Apricot-Walnut: Stir in 1/2 cup chopped dried apricots, 1/2 cup chopped walnuts, 1 Tbs. orange juice and 1 tsp. orange zest
Banana–Chocolate Chip: Stir in 2/3 cup mashed banana and 1/3 cup chocolate chips
Banana-Coconut: Stir in 1/2 cup mashed banana and 1/2 cup shredded sweetened coconut
Blueberry-Lemon: Stir in 1 cup fresh blueberries, 1 Tbs. lemon juice and 1 tsp. lemon zest
Cranberry-Walnut: Stir in 1/2 cup dried cranberries, 1/2 cup chopped walnuts, 1 Tbs. orange juice and 1 tsp. orange zest
Peanut Butter–Chocolate Chip: Stir in 1/4 cup creamy or chunky peanut butter and 1/2 cup white- or dark-chocolate chips
Pumpkin-Apple: Stir in 1/2 cup pumpkin puree, 1/2 cup diced apples, 1/4 cup pepitas (optional) and 1 tsp. pumpkin-pie or apple-pie spice
