Sweet, savory and five-ingredient easy, this roast pork is the perfect centerpiece for a wonderful weeknight meal
1⁄2 cup apricot preserves
3 Tbs. assorted chopped fresh herbs, like thyme, oregano and parsley
2 Tbs. Dijon mustard
1 boneless pork loin (about 3 lbs.)
3 Tbs. Tuscan seasoning blend, like McCormick
Heat oven to 400°F. In bowl, combine apricot preserves, chopped fresh herbs and Dijon mustard. Place pork loin on rack set in roasting pan.
Rub Tuscan seasoning blend evenly over pork loin; lightly coat with garlic-flavored cooking spray. Roast 1 hr. or until 160°F, brushing with 1⁄2 mustard glaze during last 20 min. of cooking. Let sit 10 min. before slicing.
Skim and discard fat from pan drippings. In bowl, combine pan drippings and remaining mustard glaze; heat if desired. Serve sauce with pork.
