Looking for the perfect Father's Day barbecue recipe? Look no further than this super-succulent chicken, which can be prepped ahead so it cooks while you relax with family or friends, and is basted with one of Dad's favorite ingredients: beer
1/2 cup applewood chips (optional)
2 Tbs. Montreal chicken seasoning mix, like McCormick
2 Tbs. grainy mustard
2 Tbs. chopped fresh thyme
2 cans (12 oz. each) beer, like Budweiser, divided
1 roasting chicken (about 5 lbs.)
1. Heat grill. Place foil-lined drip pan in center on bottom of grill. Soak applewood chips in water 30 min.; drain. Wrap in heavy-duty foil. Pierce top with point of knife. Place packet on bottom of grill.
2. In bowl, combine seasoning mix, mustard, thyme and 1/2 cup beer. Divide mixture in half. Place beer can in chicken cavity. Pour 1/2 remaining beer into drip pan. Brush chicken with 1/2 seasoning paste.
3. Place chicken on grill over drip pan. Cover and cook 1 1/2 hrs. or until chicken is 165°F, adding remaining beer to drip pan after 45 min.
