This one-pot, 5-ingredient scrumptious side is also delicious the next day as lunch: Just add chicken, meat or beans to the leftovers
1 small red onion, minced
1 (6.2 oz.) pkg. 5-minute long-grain and wild rice mix
1/2 cup dried apricot fruit blend
1/2 cup frozen baby peas, thawed
1/2 cup sea-salt-and-cracked-pepper-seasoned sliced almonds
In pot coated with cooking spray over medium heat, cook onions 2 min.
Add rice mix and fruit to pot; prepare rice mixture as package directs. Stir in peas and almonds just before serving. Serve warm or at room temp.
